Ingredients:
Olive oil

1 cube of chicken stock
3 cm piece of fresh ginger, peeled, cut into strips
1 clove garlic, minced
2 x 200 g noodle pack
150 g Swiss brown mushrooms, trim, chop finely
2 x 200 g thinly chopped chicken breast fillet
150 g of peas, cut, thinly cut diagonally
1 1/2 tablespoons dry sherry
4 not large bulbs, trim ends, finely chop

Cooking:
Heat a large pot over medium heat. Grease with olive oil. Add leek and fry, stirring, for 5 minutes or until soft.

Add mushrooms and chicken to the broth. Simmer for 2 minutes or until the chicken is cooked. Use a metal spoon to remove and discard foam from the broth surface.
