Tartlets with tomatoes and feta cheese
Ingredients:
2 tablespoons of olive oil
1 tablespoon of balsamic vinegar
250 g small red cherry tomatoes, cut in half
250 g small yellow cherry tomatoes, cut in half
1/4 cup shredded basil leaves
1 clove of chopped garlic
3 sheets of ready-made frozen shortcrust pastry, melt or ready-made tartlets
80 g pickled feta cheese, chopped
Cooking:
Preheat the oven to 190 ° C. Mix the oil, vinegar, salt and pepper in a bowl until the ingredients are combined. Add tomatoes, basil and garlic. Stir gently to combine. Let stand for 1 hour.
At this time, using a 7cm round cookie cutter, cut 24 circles out of shortcrust pastry. Put them in 24 small baking tins.
Pierce the base of the dough with a fork, not going all the way to the end. Bake for 12 minutes or until the dough is light golden brown. Chill the tartlets in the molds for 5 minutes.
Transfer to a wire rack to cool completely. Of course, you can use ready-made tartlets purchased at the supermarket.
Place the chilled tartlets on the dish. Fill them with tomato mixture and sprinkle with feta cheese on top. Serve as an aperitif or as a light or dark beer. But fruit beer and ale is recommended to drink without all kinds of snacks, so as not to get a taste dissonance.
